We cultivate unique varieties of olives in Western Sicily, with the aim of maximizing their sensory characteristics. The main varieties, such as Biancolilla, Nocellara, and Cerasuola, are selected to produce a fruity green oil, with typical notes of unripe olives. Our processing aims to highlight positive attributes such as freshly cut grass, green almond, artichoke, and tomato leaf.
